Page 1 of 3 Here is a delicious recipe for roast vegetable pasta.
Two Nature's Nexus Members volunteered to make the roast pasta dish at home, then they gave their commentaries.
Roasted Vegetable Pasta (Recipe submitted by Liz) 1 red onion, cut into wedges 2 courgettes, cut into slices (or leave them out if you dont like um!) Handful baby sweetcorn 2 or 3 large mushrooms sliced 1 red pepper cut into strips 300g cherry tomatoes Few Broccoli heads Fresh basil to own taste. 2 tbsp olive oil 1 tbsp balsamic vinegar 300g wholemeal pasta shapes, or mixed spinach, or tomato pasta (or mix of all) Some grated cheese if liked. 1. Preheat the oven to 200oC, gas mark 6. 2. Place all the vegetables and basil on a baking tray and drizzle over the oil and vinegar, season well. Roast for 30 minutes. 3. Bring a large pan of water to the boil and add the wholemeal pasta and cook until tender. Drain and return to the pan. 4. Stir the vegetables into the pasta and serve immediately, sprinkled with cheese.
